Try these chicken fajitas, perfect for using up your Simply Roast in the Bag Smoky Mexican chicken leftovers.

Ingredients

200g leftover chicken

1 onion

2 peppers

Tortillas

Chosen by you Mexican rice

Mexican dips stacker

10 ml oil

Method

Slice an onion and two peppers into thin strips, then pan fry with a little oil for 2-3 minutes.

Tear the cooked chicken in to strips.

Add the sliced chicken to the pan and stir through gently for 1-2 minutes.

Serve with warmed tortillas, rice, salsa, guacamole and sour cream.
